Why does it matter?

Here is where the physics lesson kicks in, so try to stay awake. Ordering bourbon on the rocks does two main things: it chills the liquid and it dilutes it.

First, the cold. Lowering the temperature suppresses the ethanol burn. That’s great if you are drinking cheap swill that tastes like nail polish remover. However, the cold also locks down the volatile aromatic compounds—you know, the stuff that makes bourbon actually taste like bourbon. You’re essentially trading flavor complexity for “smoothness.” If you can’t handle the heat, get out of the kitchen (or add ice).

Second, the dilution. As the ice melts, water mixes with the whiskey. A little water can actually be good; it breaks surface tension and releases new flavors (often called “opening up” the spirit). But too much water just turns your expensive 12-year-old single barrel into boozy flavored water. It’s a race against the melt. If you drink slow, your last sip will be a watery tragedy.
