Char is exactly what it sounds like—setting things on fire. Specifically, it refers to the process where the inside of a new white American oak barrel is essentially torched before any liquid touches it. By law, if a distiller wants to slap the label “Bourbon,” “Straight Whiskey,” or “Tennessee Whiskey” on a bottle, that juice must spend its formative years inside a charred new oak barrel.

Distillers aren’t just arsonists for fun; they have levels to this madness.

  • No. 1 Char: Fired for 15 seconds. A light toast.
  • No. 2 Char: Fired for 30 seconds. Getting warmer.
  • No. 3 Char: Fired for 35 seconds. Now we’re cooking.
  • No. 4 Char: Fired for 55 seconds. This is the big daddy, known as the “alligator char” because the wood cracks and scales up like reptilian skin.

Why does it matter?

Char matters because without it, you’re basically drinking vodka that touched some wood, and nobody wants that. When that barrel gets torched, the intense heat breaks down the wood’s hemicellulose into wood sugars. This caramelized layer acts as a filter (thanks to the carbon) and a flavor injector.

As the spirit expands and contracts with the weather, it gets pushed through that charred layer into the wood, pulling out all those delicious notes of vanilla, caramel, and spice.
