The Lincoln County Process is a signature step in crafting Tennessee whiskey, setting it apart from its Kentucky bourbon cousins. This filtration method is the legal dividing line between the two styles and is responsible for the characteristically smooth profile many drinkers associate with whiskeys from the Volunteer State. It’s a process of purification that happens before the spirit ever touches the inside of a barrel.

Also known as “mellowing,” the Lincoln County Process is a filtration technique applied to new-make whiskey, or “white dog,” before it goes into casks for aging. The unaged spirit is slowly dripped through or steeped in large vats packed with sugar maple charcoal chips. This charcoal acts as a natural filter, stripping away heavier, oily compounds and other impurities from the raw distillate. The result is a cleaner, softer spirit ready for maturation.
Why does it matter?
This charcoal filtering significantly impacts the final flavor and texture of the whiskey. By removing certain harsh notes and fatty acids, the process creates a noticeably smoother and more approachable spirit. Some distillers believe it effectively jump-starts the aging process by mellowing the whiskey from the very beginning. The main pro is this smoothness, but some critics argue that it can also strip away some of the spirit’s more complex character and grain-forward notes. To enhance this effect, a few producers practice “double mellowing,” where the aged whiskey is passed through charcoal a second time before bottling for an even smoother finish.
