Bourbon & Whiskey Distillation & Production: Rickhouse
So, you’ve seen the word “rickhouse” on a distillery tour brochure and imagined some rich guy named Rick owns a fancy house. Sorry to burst that bubble. It’s far less glamorous, but infinitely more important for the bourbon in your glass. A rickhouse is basically a big, glorified barn where barrels of whiskey go to take a long, quiet nap. Think of it as a wooden retirement home where the only residents are oak barrels, and the only activity is getting older and, hopefully, better.
Definition
A rickhouse, sometimes called a rackhouse, is a warehouse used to store and age barrels of distilled spirits, most notably bourbon. Inside, barrels are stacked on their sides on wooden racks (the “ricks”) for anywhere from a few years to a few decades. These buildings are usually not climate-controlled, meaning they get brutally hot in the summer and freezing cold in the winter. This lack of modern convenience is, believe it or not, entirely on purpose.
Why does it matter?
This is where the magic, or at least the science, happens. Those temperature swings make the barrel wood expand and contract. As it does, the whiskey is forced in and out of the charred oak, picking up all its color and a huge chunk of its flavor—vanilla, caramel, spice, you name it. The location of a barrel within the rickhouse matters immensely. A barrel on the top floor gets baked in the summer heat, aging faster and developing deep, oaky flavors. A barrel on the cool, damp ground floor ages slower, resulting in a softer, more mellow spirit. This is why a “single barrel” bourbon can be a total gamble—its entire personality was shaped by where it sat for years.
