Most people get so caught up trying to find notes of “toasted marshmallows” that they forget to actually feel the whiskey in their mouth. But texture is half the battle. Mouth feel is a subjective observation of the texture and weight of the whiskey on your palate. It has nothing to do with flavor and everything to do with physics. It’s the tactile sensation you get when the liquid hits your tongue. Does it coat your mouth like heavy cream, or does it run off instantly like skim milk? The spectrum usually ranges from thin and watery to oily, creamy, chewy, or—if you’re unlucky—rough and gritty. Essentially, it’s how “thick” the spirit feels.
Why does it matter?
Because nobody wants to pay premium prices for a spirit that feels cheap. A robust mouth feel usually indicates a quality production process. This is where things like “Non-Chill Filtered” come into play. Many big commercial brands chill the whiskey to strip out fatty acids and oils so it doesn’t get cloudy in the bottle. The problem? Those oils are what give bourbon a luxurious, velvety texture. When they filter them out, they are literally stripping the body out of the booze.
Proof plays a role here, too. Generally, higher proof whiskeys have more viscosity. If you are drinking something watered down to 80 proof, don’t expect it to hug your tongue. It’s going to be thin. A great mouth feel lingers; it coats the palate and allows the finish to hang around long after you swallow. If the mouth feel is watery, the flavor usually vanishes with it.
