A still is the giant, often copper, piece of plumbing that turns a sad, beery mash into the glorious liquid we call whiskey. At its core, a still is an apparatus used to distill liquid mixtures by heating and then cooling, separating components based on their different boiling points. In the world of whiskey, this means heating a fermented grain mash (the “wash”) to evaporate the alcohol, which has a lower boiling point than water. The alcohol vapor then travels up the still, cools, condenses back into a liquid, and voila—you have a spirit. The two main types you’ll hear about are the classic Pot Still and the industrial-looking Column Still.

Why does it matter?

So, why should you care about a distiller’s oversized tea kettle? Because the type of still used has a huge impact on the final product. Pot stills are less efficient, requiring multiple runs, but they let more flavorful compounds (congeners) tag along with the alcohol. This results in richer, more complex, and robust spirits. Column stills are efficiency machines, capable of continuous distillation to very high proofs, which often creates lighter, smoother, and more neutral spirits. So, that heavy, oily bourbon you love?
